Twice fried Plantains

I just saw a recipe for twice fried plantains.  Have not tried it yet but it goes like this....  Peel the plantain and slice it thick on the bias.  In a heavy pan deep fry in your choice of oil until the plantain is soft.  Remove them to paper towel or other absorbent to rest.  Spice them with dried chilie flaks, fresh garlic, black peppre and whar ever else you like.  While you let the oil return to temp, take a metal spatula and press the plantins flat by gently pushing on the spatula.  Return to the oil and fry until golden brown.  Drain and serve with a dipping sauce or as bottom of an open face sandwich...or whatever comes to mind... I'll be making it this weekend.

Plantains are very good, but also very starchy... so be aware.

I love Plantain chips. Unfortunately, I am stuck making my own Platainos Maduros (sauteed until caramelized), restaurant ones will almost always dust them with sugar before frying to get extra caramelization.
Diets fail because society as a whole believes body image is more important than health. The problem is that obesity is simply one of many symptoms of an illness, not the illness itself.

And I'm being cured.

Well, I bought two plantains and tomorrow I will try this and see how it comes out....I'll let you all know.
