Spinach Mushroom Salad
« on: August 29, 2010, 04:07:35 PM »
My mom made this tonight as a side dish:

5 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons lime juice
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
1/8 teaspoon rubbed sage
Dash to 1/8 teaspoon coarsely ground pepper
8 medium fresh mushrooms, sliced
7 cups torn fresh spinach

In a small bowl, combine the first 11 ingredients; mix well. Add mushrooms and toss to coat. Cover and refrigerate for at least 30 minutes. Just before serving, toss the spinach and mushroom mixture in a salad bowl.

There are tomatoes in the picture but I didn't put any on my salad.  Obviously olive oil isn't paleo, but man did it taste good!

That was weird - I saved to my computer, uploaded the image, and all the pics appeared, but when I deleted the one I uploaded, everything vanished again so I'll leave it here.

Here ya go

Olives are fruits. Why is it not paleo?

I think it's one of the ones that had to be domesticated before it was edible.
