Warning - contains oil

3 good handfuls of basil leaves (I used combo of thai and plain)
half cup oil (actually I used a bit under and it was walnut oil)
3 palmfuls of pinenuts (you can toast them if you prefer, I didn't)
Just blend it up then add
lemon juice to taste
black pepper if desired
and...

salt if desired

Variations
You can add rocket
You can also make using walnuts
I'm thinking next time of using macadamia oil and macadamia nuts

I imagine you could bake meat, chicken, or fish with it on top.  I wonder if coconut or palm oil would work.

I think coconut might change the flavour with the basil one - but now you've got me thinking about making one with just rocket and using coconut oil

I eat like a condiment - although I use the pesto as the basis for sauces too. You can also use it in stuffing. It's very strongly flavoured.

Instead of pine nuts in my pesto I use walnuts, I actually prefer it that way. Toasted or raw, either way is fine.  They're much cheaper, more nutritious (omega 3's) and fairly local.  Almost all pine nuts are sourced from China.

Yum!! Rocket and walnut is very good. Any ideas on what I should combine with coriander (cilantro)? I also want to make one where the 'nut' component is macadamias.
