Any ideas for cooking buffalo brisket?

I've just been to visit my son in Bristol for his birthday and he took me to his favourite butchers. I bought a slab of buffalo brisket, grass-fed from a local farm. I didn't know the buffalo roamed around bristol.  :)

I have never eaten buffalo. Any ideas on best way to cook it?

Brisket is a tougher cut of meat. It needs to cook "low and slow" - low temperature, slow pace. The problem is, buffalo is usually leaner than beef, so there's not as much fat to "baste" the meat as it cooks. This will make the meat tough.

I would make a stew with it. A slow cooker would be perfect for this. It'll tenderize the meat, and the meat will soak in a lot of flavor. I've made beef brisket many times like this, buffalo would work just the same.

Seconded the above. It'll need a long time for all the connective tissue to break down, but will be great after that.

In the oven on low tightly sealed in with foil, or in a slow cooker, or stovetop in a stew with the lid on. Lots of spices and onion for flavour, plus tomato will help break down the tough stuff.
The answer to your question is 'eat more fat'.

Stop counting calories. If you are eating Paleo, there is usually no need.

If you are having weight loss issues, it'd be a good idea to start posting a detailed food journal, then everyone can help.

Yup, slowcook.  I do it really simple - brown in first, then 5-6 hours in a casserole in low oven with lots of precaramelised onions, allspice, pepper, a little garlic, and some water (not masses though, I like it gooey at the end!)

I love beef brisket, I can only imagine how good buffalo brisket would be.  With it being so much leaner than beef, I would wonder how it's going to end up.  I do my brisket in the oven, following this recipe for the most part.

Just 1TB of sugar in the whole rub so easy to leave out or sub. I've only done brisket once while eating paleo.  I used a completely different rub and added a little honey to the leftover liquid before cooking down into a great sauce.  This is by far the quickest way to cook brisket.  Still comes out very moist.  I've also done them in the crockpot, came out ok but not quite as good.  On the smoker, it takes all day.

I would cold smoke it for an hour, Rub it with duck fat, cumin, coriander, garlic powder, paprika and dehyrdated onions. Vacuum seal it, then throw it in my sous-vide for 48 hours at 135-140. I'd finish it by searing on a cast-iron grill. Comes out tasting similar to smoked brisket.
