Sarah, have you tried the pork belly baked on a flat pan laid out like regular bacon?  Just wondering if you need to roll it up for a specific reason.

I've tried to panfry the strips of pork belly flat and it didn't turn out that great. I thought it was probably because it makes so much lard - it was submerged in it. Don't get me wrong I'm not at all afraid of fat it just made the texture weird. I would think it would do the same laying flat in the oven so that's why I decided to roll it so it will be a little crispy but it's worth experimenting with.

I'm so happy to hear you and your wife already tried the bacon wrapped meatballs and liked them!

I started paleo back in 2003-2004 and stopped right before new year 2005. My food budget could not sustain paleo for my wife, myself, and my new son at the time.

I've resumed as of late march of this year.
Diets fail because society as a whole believes body image is more important than health. The problem is that obesity is simply one of many symptoms of an illness, not the illness itself.

And I'm being cured.

I started converting roughly in March 2010

I was eating an extremely high carbohydrate diet in hopes of putting in weight before this.

Ugh. You're smoking candy cigarettes. Things like this may be to the letter of the paleo plan, but they're not in the spirit of it. Almond flour noodles and carrot-based marinara does not make "paleo-Italian food", it makes crap.


Thats a great link thanks! The comments are great too. I like what he says and I agree with him in spirit, but from the perspective of someone who adores baking and experimenting in the kitchen it would be hard to never do it again. I'm under no illusions that it's ideal to eat baking even when made with paleo friendly ingredients, but they are a lot healthier than the alternatives and I think treats still have an appropriate place in our lives (birthdays, christmas, guests etc). I have friends coming to stay with me today and am planning on making almond cookies sweetened with stevia, flavoured with rosewater using eggs, almonds and coconut fat, that's miles better than any crap I could find in the shops even if it's not strictly paleo, they wouldn't appreciate a bowl of blueberries as a treat like I would ;D I don't know maybe I'm just a bit of a glutton but I'd find it hard to never eat a cookie again  :( Things like that make me happy, even though I have them very rarely. Very inspiring post though, I love how he says if your food needs a prefix it's not paleo!

More than 2.5 years now.  So very comfortable. 
I'm raw paleo and my cheat is cooked meat paleo.
So technically I'm always paleo.  ;D
I'm on Raw Paleo diet but I have kids to feed on cooked paleo diet.

What?  Why is that?  What does being asthmatic have to do with surgery?

And since this is the last post in this thread:
I started a modified caveman in September and as I used things up in the ice box and cupboards, became even more caveman.  Still cleaning items out and expect to be 100% caveman by the end of October.

I had a doctor suggest this diet in the early 80's while I lived in California, but while I was having autoimmune problems at that time, I assumed they would pass as I had been indestructible up to that point.  If I knew then, what I know now, it would of been very different.

My present oncologist has recommended this WOE and after talking to him and doing some research, I see that this WOE is very viable.

Started Paleo in March of 2004 (I had been gluten-free, dairy-free since January 4, 2004) and have been doing it consistently since, with some variations in the foods, cheating levels, and levels of cooking. Have been doing a rather strict raw facultative carnivore version the last couple years, as my health started declining again on conventional Paleo that included plenty of fruits and veggies and cooked meats. Have been back on a healing track since then. So far a mostly-raw very low carb facultatively carnivorous diet has worked better than anything else I tried, and I tried a lot of different advice.

I just started 2 days ago! So of course, no changes for me just yet. But I really love this thread, it's so nice to hear the experiences of you guys who have done it for awhile. Especially hearing how much you STILL love it!

Jan 2010 after spending the day lying in bed too lazy to get up and go get some food from the shops to feed my constant cravings I decided it was time - Combining paleo with meditation has transformed my life.

Started to eat in a Paleo type way in late August, so, just a couple months...... however ..... in that couple months I manged to drop about 10 lbs of fat which I struggled to do for a LOONNGG time. I have been strength training with weights and "eating right" ( or so I thought) for many years but never, NEVER, was able to get by body fat % close to 10%. I'm hovering around 12% and have no concerns about getting to 10 , it's just a matter of time.
I don't know what the heck happened here but this gluten free, dairy free style of eating is an extremely effective way to manage your body composition...  and having that dark cloud of boarder line depression go away really makes this whole journey even more rewarding.
Onward and upward.
