My name is Kim, and I live in Central Florida. I am an admitted pasta and bread lover (never a big fan of dairy--whew!), and do like a good bean soup, so the Paleo diet will be a bit of a challenge for me. I hope I am up for it.
I've been modifying my diet gradually since I had a lithotripsy procedure done for two kidney stones back in November of '09. Not my first brush with them or their complications (UTI's, kidney & bladder infections), but this was the first time I needed surgical intervention. Since then I've increased my calcium (citrate), magnesium & potassium intake, have made a conscious effort to reduce sodium and have been drinking 10-12 glasses of water a day on average. I've also lost over 10 pounds (I'm 5'4" and weighed in at 135 back in February and felt awful--I've always been slender) but recently have been having trouble with external hemorrhoids. Being only 28, that's just NOT cool!
I started looking into a nutrient-dense diet (also an alkalizing one) and stumbled upon the Paleo diet (don't ya just love Google?). I decided to give it a go this weekend, and so far so good. I think it will actually be difficult to maintain a 1500+ calorie diet, considering that the foods I'm eating are so low in them. But with all the added fiber, my booty is pretty happy

I've got a killer cornish hen recipe to share, if anyone is interested! My mouth is watering just remembering it from earlier this week....
I also have lots of animals: a German Shepherd, a lab mutt, a kitteh, a cockatiel & 10 budgies
