avelin's meals
« on: July 21, 2010, 01:24:02 AM »
By way of introduction:

I eat nightshade family so of course... I love coffee
I'm partial to black, white, green and fruit teas
I will sometimes eat dairy
I like to cook with olive, coconut, walnut and macadamia oil
I really like fruit
I think everyone should grow a few herbs and greens - even in pots

Friday 23 July

made some new beef stock - beef bones and offcuts with celery, capsicum, onion, carrot, parsley, marjoram, thyme and some tomato in water simmered for about 3 hours. I sometimes simmer stock right down and then freeze in ice block trays (the ones you use for home made iceblocks on a stick) and now my meat consumption is up I can make some really rich stock

going to post recipe or two for dukkah in recipe thread - nuts and seeds and spices blended (I searched here but found no mention of it)

Sat 24 July

Big cook-up today - slow cooked big big pot of steak, onion, cabbage, mushroom, capsicum, parsnip and tomato in beef/vegie soup and thyme, parsley, marjoram, oregano. I used a pressure cooker but I have a simmer flame on the stove so the stew cooked about 5 hours at a teeny temperature.

Mid morning - lamb rubbed with minced oregano, parley, thyme and garlic, and tossed onto barbeque. Lamb+barbeque=Australia lol

Evening - fish, asian greens in creamy coconut curry (think green curry with lots of coconut but no soy or sugar)

I have planned to have some berries later.

Sunday 25 July

Morning - used some of the tomato, eggplant, onion & zuccini mush squished into minced meat to make scotch eggs to take to work for breakfasts, ate the leftover mince as a pattie with a runny egg on it. Had it with a coffee with coconut milk.

Lunchtime - leftover barbequed lamb from yesterday

Evening - leftover coconut beef from a couple of days ago - there was maybe a cup left including vegies.

Hot chocolate at bedtime - made mostly with water and a tad of cream.

Tuesday 27 July

work day (drank lots of water, craved fat)

morning - coffee

midmorning - half a grapefruit & green tea

lunchtime - salad of cos, baby spinach, rocket, cucumber and tomato (walnut oil/lemon juice dressing) and a scotch egg

midafternoon - coffee (for energy)

early evening - satisfied fat craving! Fried up the cut off fat from the last couple of day's steak until crunchy, added a bit more steak and then two eggs. Cooked only until meat pink and eggs runny. Ate the lot and enjoyed every bit including chomping through the crunchy bits using my fingers.

later - the plan is for cocoa with coconut milk and a few raw nuts.

Saturday 31 July

A bit of dairy  and cocoa today...meh. It's been a balmy day and I can smell the warmer weather - even though it's mid-winter here.

morning - coffee with cream (I usually use about 2tbsp)

early lunchtime - leftover meat stew (it had beef, onion, capsicum, parsnip, variety of herbs and stock but after heating it was kinda mush but yummy)

afternoon - cocoa made with water but cream added and about a dozen cherries, ...and um a spoonful of pawpaw and a bite of pineapple

dinner - poached fresh salmon with a bruschetta with baby spinach:
chop tomatoes and combine with a bit of finely chopped onion, spring onion, onion leaves, garlic and fresh basil. I dressed mine with with a bit of evoo, pepper, lime and water and let it sit in the fridge for a few hours. Toss with baby spinach leaves and maybe add a bit of chopped cucumber.

later - half punnet of strawberries

Going to make Zen's stew flavours tomorrow but I'll be using fresh chilli and herbs from the garden... your ribs sound good Zen!
